Tater Tot Nachos Recipe

I first tried a similar tachos recipe while traveling for a food conference in Salt Lake City Utah. I couldn't believe how good they sounded on the menu and ordered a plate to share with friends I was meeting at a restaurant. Honestly, I ate the whole order before they arrived!

Weekends are made for this kind of food, spent relaxing with family and friends watching movies or games, and munching away on comfort food. To make these you will need...

  • frozen tater tots
  • pepper jack or shredded cheddar cheese
  • pulled pork (or shredded rotisserie chicken or ground beef taco meat)
  • pickled jalapeños
  • green onions
  • tomatillo salsa (any brand or make my recipe!)
  • sour cream
  • avocado
  1. Preheat oven to 400 degrees.
  2. Bake tater tots on a parchment-lined baking sheet for 20 minutes. Leave oven on.
  3. Make tomatillo sauce: mix equal portions of sour cream and green tomatillo salsa in a small bowl. Set aside.
  4. On a sheet pan (or cast iron pan) layer golden brown cooked tater tots, grated pepper jack cheese, shredded pulled pork (chicken or beef), and pickled jalapenos and repeat layering until all the pork, cheese, and jalapeno peppers are used.
  5. Reheat for 5 minutes to melt the cheese in the oven at 400 degrees.
  6. Garnish with diced avocado and green onions, and drizzle with tomatillo sauce.
  7. Keep leftovers in an airtight container and use them within 3 days. Or freeze leftovers and use it up within a month.

Totchos With Ground Beef

Make taco meat for these instead of pulled pork nachos. Cook the ground beef over medium heat in a large skillet. Drain the fat if you wish. Mix in some taco seasoning and add some salsa, it makes the best spicy ground beef for nachos, tacos, or taco salad.

Oven Roasted Pulled Pork Recipe (Pork Loin)

Oven Roasted Pulled Pork is moist and super savory! Season with a homemade rub and cook it with these slow-roasting secrets. We cover how to make pulled pork at a low oven temperature as opposed to slow cooked in a crockpot. And why a loin is the best cut! The low heat temperature and a long cooking process make the meat easy to shred as it becomes tender over the hours. The result: perfectly moist yet slightly caramelized edges with the best flavor.

Who invented tater tots?

The founders of Ore-Ida created them in 1953 when trying to come up with a creative profitable way to use up leftover cut-up potatoes.
They chopped up the potatoes, added seasoning and flour, and "tots" were born.

At first, Americans didn't buy them, they were priced so low people thought that such an inexpensive product was worthless. Once the price was raised, they became a national sensation. Today, Americans consume over 70 million pounds of tater tots a year.

How did Tater Tots get their name?

A name was needed when Tater Tots were first created, so an employee contest was held to pick a name. The winning entry was made by Clora Lay Orton, a young housewife. She chose tater-slang for potato and tot- for their small size. And she won!

Notes

Pulled Pork

This recipe time does not include the time to make pulled pork at home. Try my recipe for Pulled Pork Oven Low and Slow. You can make pulled pork in the oven, it is easy and amazing.

Instead of pulled pork, try shredded chicken breast, shredded rotisserie chicken, crumbled or sliced grilled sausages. Those would all be great.

Tomatillo Salsa

Tomatillo Salsa is green, but you can use any salsa brand you like.
